Breakfast is the most important meal of the day (so say “they”), so kick start your day the very best way – with a tasty, fresh and healthy dish.
British food retailer Marks & Spencer has shared a healthy and easy-to-make overnight oats breakfast smoothie recipe.
The recipe serves one and if you’re vegan, you can replace the honey with either maple syrup of agave nectar.
Ingredients:
• 20g rolled oats
• 1 tsp chia seeds
• 200ml almond milk
• 1 tbsp honey
• 1 tsp vanilla extract
• 1 ripe banana
• 100g frozen summer berries
• 3 tbsp low-fat Greek-style yogurt
• Optional: extra fruits and chia seeds to garnish
Method:
• The night before, combine the oats, chia seeds, almond milk, honey and vanilla extract, then mix well.
• Cover and leave to chill in the fridge overnight.
• The following morning, give the oat mixture a stir and tip into a blender with the banana, frozen berries and yogurt, and blend until smooth.
• Pour the overnight oats breakfast smoothie into a glass. Garnish with fresh fruit and a sprinkle of chia seeds, if you like and enjoy.
