Nalinda Perera, Executive chef at La Varenne and The Anvil Rooms shares some career advice

Quit your job, become a… chef

When did you first start cooking?
I started cooking as an eleven-year-old in my mum’s kitchen and that’s where my passion for cooking commenced.

What dishes do you remember most from childhood?
The taste of the curries my mum prepared stands out vividly in my childhood memories.

How do you go about creating a menu?
A menu is created keeping in mind the season, time of the year, the seasonal produce available in the market and the community we cater to.

Do you have a favourite food to cook?
I enjoy cooking with seasonal produce.

Your favourite thing about being a chef?
The greatest joy is that I get to feed people and the feedback and appreciation I receive about the dishes. Both positive and negative comments inspire me to progress and become better.
