You have to try this brand-new Nordic restaurant in Doha

With the myriad of cuisines in Doha, Al Messila Resort has finally brought something new to the table with the introduction of Doha’s very first Nordic restaurant.

Snøull, curated by Michelin-starred chef Theis Brydegaard, is inspired by friluftsliv – the Scandinavian philosophy of reconnecting with nature. So naturally, this unique offering is based on plenty of fresh, natural and authentic flavours.

With its open spaced interiors, rustic wood, natural stone, soft linens and exuberant musing, you are immediately transported to a contemplative venue, one with vibrant colours yet a calm atmosphere. It feels like you’re part of a wellness journey.

The menu bears all the hallmarks of chef Theis Brydegaard with light, clean Nordic flavours and dishes crafted with many of the ingredients in their naturally nourishing raw and rich form.

Freshly pressed juices, foraged biodynamic produce and fresh, grilled fish provide dishes that are delicious and nourishing at the same time.

The chef is committed to creating simple food from local produce and implementing his culinary craftsmanship to present stunning and tasteful dishes.

All the flavours are innovative from the dehydrated beet dusted with dried berry powder and accompanied by an emulsion of smoked mussels to the hay smoked local yellowtail served with crisp gooseberries and smooth ponzu dressing.

Chef Brydegaard has also created his own take on the traditional Qatari dish Harees. His wholesome and creative version uses grainy oats, sweetbreads, firm and chunky chicken hearts, and pickled mushrooms.

If you’re looking for a unique and absolutely exquisite culinary experience, we can’t recommend Snøull enough.
Open Mon-Sat noon-10pm. Al Messila, a Luxury Collection Resort & Spa, Doha, 970 Um Al Sneem Street (4445 0000).
