Ramadan in Doha 2020: How to make lamb ouzi

This Ramadan, we’re sharing recipes from chefs from our favourite restaurants and hotels in Doha.

You'll find the famous Arabic dish at almost every hotel iftar or suhoor in Doha. But this year, Mandarin Oriental, Doha's executive chef Bruno Anon is sharing a recipe for you to make it at home.

INGREDIENTS

To marinate the lamb
10 kg whole lamb  
30g carrot  
50g lemon, cut in half
30g cinnamon powder 
20g cinnamon stick 
20g cardamom pod 
20g cardamom powder 
15g bay leaves  
50g cumin powder  
50g ginger powder  
20g whole star anise 
250g white onion  
20g black pepper  
50g whole garlic  
3g saffron   
250g tomato paste  
400g yoghurt  
250 ml ghee   
50 ml olive oil  
50 ml rose water  
150g salt   

For the rice
1.5 kg basmati rice  
500g minced lamb  
30g cinnamon powder 
20g cinnamon stick 
20g cardamom pod 
20g cardamom powder 
15g bay leaves  
50g chopped onion 
30g chopped garlic  
200g ghee   
40g salt    

To garnish
50g toasted cashew nut 
50g toasted almond   
30g toasted pistachio 
5 boiled eggs  
30g whole red chilli fresh 
2 grilled tomatoes (cut into halves)
2 oranges (cut into halves)  
100g parsley, fried  

METHOD

For the lamb
1 In a mixing bowl place the fresh yoghurt, olive oil, tomato paste, salt, white pepper, ginger powder, cardamom powder, cumin powder, onion paste and saffron and mix well until combined.

2 Clean the lamb and place in a container then add the marinade throughout. Let it marinate for five hours.

3 Place the marinated lamb in big baking tray, add onion, whole spices, garlic, carrot and add two litres of water.

4 Cook the lamb in oven at 160 C for 3.5 hours on steam roast and then remove the cover and bake it for another 15 minutes. The meat should be tender and juicy.

5 Glaze the lamb with ghee and saffron water.

For the rice
1 Add the basmati in a bowl, cover with water and soak for 20 minutes.

2 In a hot cooking pot put the ghee, add whole spices, chopped onion and garlic and minced lamb. Mix all the ingredients well.

3 Add cinnamon powder and salt, mix well.

4 Strain the rice, add the minced lamb meat, water and mix them well. Cover the pot with a lid.

5 Put on slow fire for 20 minutes until the rice is cooked.

To serve
Serve in a big plate adding the ouzi on top of the rice and garnish with toasted mixed nuts with your choice of grilled vegetables.
