Ramadan in Doha 2020: How to make Sofra’s mixed grill

This Ramadan, we’re sharing recipes from chefs from our favourite restaurants and hotels in Doha.

Chef Hisham Al Ahmad from Alwadi Hotel Doha’s popular Arabic restaurant Sofra is revealing all the secrets of the delicious mixed grill on the restaurant’s menu and it’ll take you only 30 minutes to prepare.

INGREDIENTS
200g lamb (minced)
200g chicken breast
200g beef cubes
200g lamb chops
15g salt
10g black pepper
50g chilli paste
50g parsley
50 ml olive oil
100g onion
20g seven spices

METHOD
- For the kofta with minced lamb

- Mix the meat with chopped onion, parsley, salt, seven spices and pepper.

- For the chicken

- Mix with olive oil, lemon juice, salt, chilli paste and tomato paste.

- For the beef cubes and lamb chops

- Mix with salt, olive oil and chilli paste.

- All of the above should be grilled and served with Arabic bread, rice or fries.
