Dish of the Month: Paella de pollo

January in Spain is special. It’s that time of year when hundreds of drummers parade the streets making as much noise as is humanly possible during La Tamborrada.

The Spanish vibes in El Faro are possibly as loud and exciting as the city of San Sebastian’s most important festival and they’re serving up our favourite Spanish comfort food – paella.

Our highlighted dish of this month has given us lots of reasons to try it out. It’s made with the finest of ingredients, mostly locally sourced. The bomba rice used is brought in all the way from Spain though, and you can choose if you want chicken, seafood (fresh fish, shrimps and scallops, anyone?) or vegetarian.

All the ingredients are carefully cut and mixed with the sofrito, which with the seafood broth gives an exquisite flavour to the rice. We’re not joking, a few bites of this paella will transport you to the heart of Spain, already planning your flamenco show for the night and the next day’s trip right to La Tamborrada. It’s the perfect decadent mix and El Faro’s chef Fernando can create any version of the dish, if you wish to customise it, and still serve it in the most traditional way, out of enormous pans.

So while we head back over to El Faro this week for round two and happily order the four-person portion for just the two of us, we strongly suggest you grab your gang and do exactly the same. Just remember to thank us later. That’s what we’re here for.
