On the first Monday of the month, 14 lucky diners are treated to one of the city’s most exclusive dining experiences. Prime Club is an opportunity for the restaurant’s chefs to really get creative and put together a menu that shows off their culinary flair.
The six-course menu changes every month, featuring delicious dishes like guinea fowl and cabbage stuffed with duck confit. But the showstopper of the event is always dessert.
This huge, table-sized platter is one of the restaurant’s signatures and apart from making appearances at Prime Club, is available on request in the private dining room, and even on a smaller scale for more intimate dinners.
The whole thing can serve up to 14 people and is based on the dessert tasting platter from the regular à la carte menu. The chefs paint fruity compotes and caramel sauces onto the table, and add everything from poached apples to pecan pie and slices of sharp lemon tart with pillowy meringue that’s toasted on the spot. There’s a dreamy pistachio brioche bread, liberal helpings of fresh fruit, smoking dry ice, melting chocolate spheres filled with lava cake, flambé sauces poured over everything with the lights turned down and more chocolate spheres filled with treats and smashed onto the table.
The final artwork is stunning. This dessert is just as much about the experience as the taste, and in this case it tastes exactly as good as it looks.
